Eggless cookies!!!
I am a vegan and always find baking these cookies a big challenge. The aroma of freshly baked cookies is so irresistible. My daughters are so fond of them that they have the recipe on their tips. They will take out butter stick and all measures in the night, which tells me what's baking in the morning!!
For cookies what you will need
- Pizza stone/ cookie sheet
- 1/2 cup organic gram flour or besan
- 1/3 cup organic whole wheat flour
- 1/3 cup organic wheat farina or sooji
- Pinch of pure baking soda
- 1/2 teaspoon organic coarse grounded cardamom
- 1/2 cup or 8 Tbsp. organic unsalted butter (Room temperature) (do
not heat up the butter)
- 1/2 cup organic coconut sugar
- 2 Tbsp. organic sliced almonds
Here is how to...
- Preheat the oven to 375 degree.
- In a large bowl whisk well dry ingredients (whole
wheat flour, wheat farina, gram flour, baking soda, cardamom,
almonds)
- Whisk together butter and sugar in a large bowl until
fluffy
- Mix wet and dry ingredients and knead well.
- Pinch off tablespoon-size pieces of the dough, press them gently and place them on pizza stone/ cookie sheet
- Bake in oven for 15 minutes or till light golden brown. Remove from oven and cool on a rack.
- Enjoy!

Simply yummmmm organic eggless banana nut muffins!
It’s only the first day of spring break and I am already bombarded with - We are bored. What's for fun? What's cooking? What's next?
I told my kids why don't you two come out with a fun plan for
this week and I will follow.
The idea worked. They have listed activities... loads of
them.:)
They love to bake. So, today they baked banana nut muffins,
clicked pictures and updated their docs.

For organic eggless banana nut muffins you need -
- 4
organic not too ripe bananas
- 1/2 cup organic coconut sugar
- 1/3
cup or 5 Tbsp. unsalted organic melted butter (room
temperature)
- 1
tsp. baking soda
- 1/2
tsp. baking powder
- 1/2
tsp. sea salt
- 1/2
tsp. coarse ground Cardamom
- 1
1/2 cups of organic whole wheat flour
- 1/2
cup organic milled flax (optional)
- 1 Tbsp.
organic chia seed (optional)
- 1 cup nuts (organic walnuts, almonds and raisins)
Here is how to......
- Preheat
oven to 375 degrees F.
- Line
muffin pan with muffin paper cups.
- Chop
walnuts and almonds. Slice bananas.
- 1 Tbsp organic milk
- Whisk
together coconut sugar, melted butter, sliced bananas and milk. Using a blender mix them well.
- In
a large bowl whisk together dry ingredients (whole wheat flour, baking
powder, baking soda, nuts, raisins, milled flax, sea salt, cardamom,
chia seed)
- Add
wet ingredients to dry and mix them together. (save some nuts to
sprinkle on top)
- Fill
muffin cups with batter and sprinkle leftover nuts on top.
- Bake for 15 minutes or till the muffins are golden brown and toothpick inserted in center comes out clean.
- Enjoy!

What you will need for this cool chick

- Construction papers
- Glue
- Scissors
- Marker
- Pencil
- Draw a chick on yellow construction paper.
- Cut and stick chick on the blue construction paper. Finish with a beak using orange construction paper and eyes using marker.
- Using pencil draw an egg shape on the white paper.
- Poke pencil in center of white paper and then hand tear for opening.
- Place the opening on chick and stick the egg onto blue paper using glue.
- Use green construction paper strip for grass.
